The Flashpoint projection Monitor is not a projection of sales items sold; instead it is a projection of what is required to be prepared by the hour (chicken pieces). When generating the projections, Flashpoint allows for the ability to override the projected amount, to take in to consideration bad weather or special events. The projection report guides the cook with the preparation of food by displaying the projected sales along with the current live sales. As the cook prepares the chicken he/she enters the actual amount prepared, using a bump bar. The projection monitor system always displays the previous hour’s totals so management can monitor the cook’s performance.
